Description ’n “Nuwe generasie” voedselpatogene het die afgelope jare hul verskyning gemaak en kan 'n ernstige gevaar vir die voedselbedryf inhou. Hierdie organismes is uiters aanpasbaar en bestaande voedselprosesseringstegnieke, veral die verkoeling van voedsel, is nie altyd volkome effektief om hul groei te voorkom nie. Clostridium botulinum tipe E, enterotoksigeniese Eschsrichia coli. Listeria monocytogenes en Aeromonas hydrophila is in staat om in voedsel by 5 °C te groei. Campylobacter jejuni en Brucella kan weer by 5 °C oorleef en 'n derde groep organismes, naamlik Salmonella, Staphylococcus aureus, Vibrio parahaemolyticus en Vibrio vulnificus kan by temperature tussen 5 °C en 12 °C groei en hul teenwoordigheid is ’n aanduiding dat die koueketting verbreek is. A “new generation" of food pathogens has emerged which can cause problems in the food industry. These organisms are very adapt­able and existing food processing techniques are not always effective in controlling their growth, especially the refrigeration of the food. Clostridium botulinum type E, enterotoxigenic Escherichia coli, Listeria monocytogenes and Aeromonas hydrophila are capable of growing in food below 5 °C. Campylobacter jejuni and Brucella can survive at 5 °C and a third group of organisms namely Salmonella, Staphylococcus aureus, Vibrio parahaemolyticus and Vibrio vulnificus may grow or survive at temperatures between 5 °C and 12 °C and their presence is an indication of the interruption of the cold chain.
